With all the talk about the Great Irish Bake Off, i can’t help myself from craving relentlessly baked goods. And because im no Master Chef in the fine art of baking – some could even say that im a complete disaster – i was looking for a fool proof, delicious recipe of cookies.
Ingredients needed for 12 cookies: 200g unsalted butter (i used salted and was fine), 200g caster sugar (original recipe 300g, but i don’t like my cookies over sweet), 275g self rising flour, 1 large egg, 3 bars of chocolate (white, black and milk). You can add a splash of milk if your dough is too dry, but i didn’t need any.
Slightly warm the butter in the microwave to soften it, add the caster sugar and mix evenly until it becomes a cream. Add the egg and slowly pour over the flour, blending continuously to avoid lumps. I used a strainer to add my cocoa powder, as seen in Luke’s video to ensure my dough will remain creamy and lump free. You can add now little squares of black and white chocolate and mix some more. In my case the composition was remaining creamy and firm, maybe because my butter was quite soft when i put it in, but if it starts to look too dry to manage add a splash of milk.
Prepare a large tray with some baking paper and preheat the oven to 200-220C. Start making medium size balls of dough using your hands, place two squares of milk chocolate in the middle and cover up. This will ensure a gooey soft center of decadence! Top the cookie off with a square of white chocolate and they are ready to be baked.
